Celtic Whisky Distillerie’s Blending Process and Manufacturing Secrets

Once the spirits have reached an optimum level of maturation it is time to add the finishing touches to the whisky before bottling it. The time for blending has arrived.

Kornog and Glann Ar Mor, Celtic Whisky Distillerie’s two single malts, are the result of the expert blending of the contents of the distillery’s various casks. Achieving the ideal blend requires the skills of the blender and cellar master.

The Blending of Our Single Malts

In order to achieve the perfect blend we regularly inspect all the spirits matured in the distillery’s cellars.

The final task of blending our single malts consists of selecting different casks and then composing the whisky, striving to get as close as possible to the original recipe, which gives a Kornog Roc’h Hir or a Glann Ar Mor Bourbon Barrel its uniqueness and character.

The tried and tested procedure is to taste each sample in isolation before considering and evaluating the blend. Once the blend has been made we proceed to an operation known as reduction, the aim of which is to gradually lower the alcoholic strength of the blend to 46%, the concentration that allows the full flavours of Kornog Roc’h Hir, and Glann Ar Mor Bourbon Barrel, to be revealed.

Cask selection of spirits for the production of single casks and other finishes

Celtic Whisky Distillerie regularly bottles two special editions of Kornog: Sant Ivy, a single cask, and Sant Erwan 50%. A single cask is not the result of blending, on the contrary, it is made from a single cask selected for its exceptional quality.

Here only the magic of ageing works. At least once a year, Celtic Whisky Distillerie checks all the spirits aged in its cellars. The volume contained in each cask is checked as well as the quality after tasting. The most exceptional spirits are monitored more regularly.

Finally, Celtic Whisky Distillerie occasionally carries out special-finish bottling. The spirits selected for these bottlings are finished in casks other than Bourbon barrels (Sauternes, Layon, Pedro Ximenez, Cognac, etc.).
